Though we’re still wrapping up in scarves and coats, the arrival of February means we can begin dreaming of spring. This transition is captured in our Rhubarb & Custard, a classic flavour pairing that never goes out of style. Poached English rhubarb compote meets a vanilla crème brûlée crèmeux, all encased in a light vanilla whipped mousse. It’s fresh, tangy, and a perfect nod to the changing seasons.
And for those who crave something bright and zesty, our Citrus Cloud is an absolute delight—lemon drizzle sponge, a lightly whipped lemon Chantilly cream, and a topping of fresh citrus fruits to bring that burst of sunshine to your plate.
