Café Praline Royale

Delicate coffee-soaked Joconde sponge layered with our signature chocolate ganache and crunchy pecan praline, finished with a light white chocolate mousse and whipped ganache. Garnished with roasted pecans for the perfect balance of richness and texture.

A striking dessert combining the intense acidity of Morello cherry with the richness of dark chocolate. Layers of Morello cherry crémeux and cherry compote are balanced with a silky dark chocolate crémeux and dark chocolate namelaka, creating a refined interplay of tart, bitter and creamy textures.

Blackberry compote centre, lime crémeux and blackberry & lime mousse, layered over vanilla genoise sponge. Finished with a white chocolate velvet spray, blackberry glaze and fresh blackberries.

Light mango mousse surrounds a silky matcha namelaka and mango & miso compote, finished with a velvet chocolate coating and served on a fudgy dark chocolate brownie. A harmonious contrast of tropical fruit, earthy tea and subtle umami.

A rich dark chocolate sweet pastry case filled with luxurious dark chocolate crémeux, layered with delicate peanut praline and aromatic tonka bean crémeux. Finished with a smooth layer of chocolate crémeux for an indulgent dessert with deep chocolate notes, roasted peanut richness and warm, fragrant tonka.
